Slaw
- 1 head broccoli
- 1 cup thinly sliced cabbage
- 1/2 cup thin sliced red cabbage
- 3 fresno chili peppers sliced thin
- 1/4 cup mayo
- 2 tablespoons rice vinegar
- 2 limes juice
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon sesame seed
- 1 tablespoon chili crisp
Beef
- 3 pound sirloin roast or top round
- 1 small onion diced
- 15 cloves garlic
- 2 fingers ginger peeled
- 1/2 teaspoon salt
- 1/3 cup soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons mirin
- 2 tablespoons oyster sauce
- 2 tablespoons thai chili paste
- 2 tablespoons honey
- 1 beer
- 1 tablespoon sesame oil
- 6 burger buns
Make the slaw by shredding the broccoli stems with a julienne peeler or spiralizer, and cutting the tops really small. Mix the broccoli with the cabbage and all the other slaw ingredients and set aside in the fridge until ready to use.
Sear the meat on the first side on high heat and season with salt. Flip to sear on the other side and add the onions, whole garlic cloves, and big chunks of ginger to the pot. Cook 5 minutes to brown the meat and sweat the onions.
Add the rest of the sauces to the pot and add in the beer. Do not add the sesame oil. Stir well. Cook on low heat for about 3 hours until the meat is falling apart. Stir in the sesame oil.
Shred the meat. Toast the buns
Build the sandwiches, bun, beef, slaw, bun, and serve.
