Cheesy jalapeno cornbread hot dogs

A soft flour tortilla filled with cheesy jalapeno cornbread with a hot dog right in the middle! Baked into handheld corn dogs. Topped with butter and honey.

Ingredients

  • 8 stand up soft tortillas (Old El Paso)
  • 1 cup flour
  • 1/2 cup fine cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 1/2 cup melted butter
  • 2 eggs
  • 1/4 cup melted butter
  • 2 tablespoons mustard
  • 1/4 cup sugar
  • 2 jalapenos diced
  • 8 ounces cheddar cheese shredded
  • 8 hot dogs look for long curved natural casing dogs
  • Pickled jalapenos for garnish
  • honey for garnish

Instructions

  • Preheat oven to 425
  • Place the tortillas in a 13x9 baking dish. you should be able to fit 6 across, and two perpendicular on the side. Baking them in this type of dish helps them keep their shape.
  • Bake the tortillas for 6 minutes.
  • Meanwhile, mix the flour, cornmeal, baking powder, baking soda, salt, and pepper in a large bowl.
  • In a separate bowl, whisk the buttermilk with the eggs, butter, mustard, and sugar.
  • Mix the liquid ingredients into the dry ingredients and stir to combine.
  • Mix in the jalapenos and cheese.
  • Scoop 1/2 cup of the cornbread batter into each tortilla. Press a hot dog into each tortilla so that the middle of the dog is touching the tortilla and the edges are bent up on the sides. Top the dogs with the remaining batter evenly.
  • Bake for 25 minutes. Rotate the pan half way to brown evenly.
  • Remove from heat. Use a knife to separate them where the cornbread has risen over the tortillas. Top with butter, honey, and sliced pickled jalapenos. Serve hot.

Notes

Tip for this recipe- The brand who makes these tortillas is Old El Paso. The tortillas come in 8 packs which might seem great, but they are often uneven. They still will all work, but if you want them to all look good and spill as little cornbread as possible, you may want to get 2 packs and choose the best looking tortillas from each.
