Beer and Barley Chili
Summertime chili with lots of fresh veggies and tender barley in a beer broth.

Servings: 8 servings
- 1 pound ground beef
- 1/2 pound diced pork
- 1 onion diced
- 1 bell pepper diced
- 3 jalapenos diced
- 3 cloves garlic minced
- 28 ounces canned diced tomato
- 2 12 ounce beers
- 1 tablespoon cumin
- 1 teaspoon coriander
- 2 teaspoons chili powder
- 2 chipotle peppers in adobo sauce diced
- 3/4 cup barley
- 2 small zucchinis diced
- 1 cup corn
- sour cream and cilantro for serving
Cook the beef and pork in the pot to brown, about 5 minutes.
Add the onion, pepper, and jalapeno and sweat, stirring often, about 10 minutes.
Add the garlic and cook 2 minutes.
Add everything else and stir well. Season to taste. Cover and simmer about an hour and a half until the barley is tender.
Serve with sour cream and cilantro.
