Latkchos – Latke Nachos

Latkes piled up with cheese and apples, and baked like nachos. Topped with sour cream and scallions.

  • 3 russet potatoes grated about 4 cups
  • 1/2 a large onion grated
  • 1 egg
  • 2 tablespoons breadcrumbs
  • salt and pepper
  • oil for frying
  • cheese
  • diced apple
  • sour cream
  • sliced scallion


  • Put the grated potatoes into a large bowl of cold water and allow to soak for an hour. Drain
  • Mix the onion into the potatoes and allow them to dry on a paper towel. Wrap the towel around them and squeeze out excess liquid. Pour them into a large bowl.
  • Add the egg and breadcrumbs and stir to combine. Add in salt and pepper.
  • Form large coin shaped patties with the potato mixture. Pour about a half inch of oil in a frying pan. Cook the latkes in the oil about 2 minutes per side to brown. Allow to cool and dry on a rack or paper towel.
  • Pile up the latkes and top with cheese and apples. Broil on low to melt and brown the cheese. Top with sour cream and scallions before serving.
