Latkchos – Latke Nachos
Latkes piled up with cheese and apples, and baked like nachos. Topped with sour cream and scallions.
Servings: 3 people
- 3 russet potatoes grated about 4 cups
- 1/2 a large onion grated
- 1 egg
- 2 tablespoons breadcrumbs
- salt and pepper
- oil for frying
- diced apple
- sour cream
- sliced scallion
Put the grated potatoes into a large bowl of cold water and allow to soak for an hour. Drain
Mix the onion into the potatoes and allow them to dry on a paper towel. Wrap the towel around them and squeeze out excess liquid. Pour them into a large bowl.
Add the egg and breadcrumbs and stir to combine. Add in salt and pepper.
Form large coin shaped patties with the potato mixture. Pour about a half inch of oil in a frying pan. Cook the latkes in the oil about 2 minutes per side to brown. Allow to cool and dry on a rack or paper towel.
Pile up the latkes and top with cheese and apples. Broil on low to melt and brown the cheese. Top with sour cream and scallions before serving.
