I had lots of mortadella leftover from my meat slicer party, and here is just another fun way I used it up. What I enjoyed about this pasta was the creamy mustard flavor, and also the fact that the pasta and all the ingredients were similarly sized. You could just sort of shovel it all into your mouth and get all the different ingredients in each bite. Shovel-able is a great attribute for any pasta dish.
I had some co-workers over for a quick bite on the way out to a “Team Building Event” (bar crawl). Had to stick to veggies because one is vegetarian, but I wanted to make something light anyways. I needed it to be really delicious because these people cook my recipes at Cafe Burrito every day and I wanted to show them that I was good at cooking other types of food too. I decided on making a simple cauliflower and chickpea curry and rolling it into some fresh rolls. I made a quick yogurt raita as a dipping sauce and the rolls were a big success.

I was in the mood for some Korean style kimchi pancakes, but wanted to make them with fresh veggies instead of the normal fermented cabbage. I went to the store and just grabbed a couple vegetables I felt like eating and went for it. I tossed the veggies in some vinegar and chile paste to let them marinate a little before adding the flour to make the pancake batter. I loved these pancakes. The crunch of the almost raw cauliflower combined with the crispy browned edges made for a real textural treat, and the deep savory flavors in the gochujang caused a craving for the next bite every time.
In the summer, it’s so easy to slap a veggie sandwich together that is nice and healthy but still delicious and satisfying. In the winter, you could make the same sandwich if you wanted, but not only will it not taste as good because of out of season veggies, but it isn’t as satisfying because your body isn’t craving that type of thing right now. I made this nice hearty winter veggie sandwich last week that totally hit on everything you crave this time of year and was the best sandwich I have had in a really long time.

I think this idea came from an old episode of Iron Chef where Bobby Flay cooks some pasta in jalapeno juice. One of my favorite things to cook with jalapeno is bacon, and it seems to be a very popular thing these days. There is even jalapeno crusted bacon in the grocery store! You would think that this dish is all bold intense flavors, but it actually came out more subtle and perfectly balanced. Boiling the pasta in jalapeno juice didn’t give it a crazy spicy taste, but rather imparted the true jalapeno flavor with just a little bit of the heat that it is so well known for. This was a fairly easy dish with unique and delicious flavors that I would highly suggest anyone who has a juicer to make immediately.
