Ice cream loaded with Easter candy like Peeps and Mini Eggs.
I had an ice cream at Ronnybrook Farm Dairy at Chelsea Market about a month ago that was “2 cookies and cream”. It was really clever and also really really delicious to mix chocolate chip cookies into the regular cookies and cream. Ice cream has been on the brain lately, and September is my favorite time of the year to eat ice cream, so I decided to top their flavor and double the cookie content! In addition to oreo and chocolate chip, I also mixed in peanut butter cookies, and finished it all off with a speculoos cookie spread as a swirl. This was hands down the best ice cream I have ever made! My only question is “who can top that shit, who can top that shit”?
Habanero ice cream has been on my list for a while, because habaneros pair extremely well with dairy, and also sweets so I thought the combo would be only natural. The milk and sugar also helps remove the heat from the peppers and leaves that sweet tropical pure habanero flavor that is like nothing else in the culinary world. At a farmers market last week Warren Farms had a free sample of their habanero infused maple syrup, and I instantly knew that that would be the flavor of the ice cream. I made it only a few days later!
Last year at Easter brunch at my Aunt’s house, she asked me “Dan, where is that french toast bake that you told me you would bring when we talked on St. Patrick’s Day?” You guys probably can guess the end of that story, but the moral is, don’t give me a future task at 10pm on a Saturday St. Patricks! That night I put a reminder in my calendar for the week before easter 2013 to make a fun french toast/bread pudding bake.
My goals for this dish were as follows. Don’t make it to desserty; keep the sugar on the lower side so it registers more as a french toast than a full on bread pudding. Make it very juicy; I wanted the texture to be creamy and not dried out at all. Make it as different from my Mom’s bread pudding as possible; She makes a really good one and this needed to be different to avoid comparisons. I personally thought the goals were achieved and it tasted really good, but my Mom of course couldn’t help but do some comparing.
