I had an ice cream at Ronnybrook Farm Dairy at Chelsea Market about a month ago that was “2 cookies and cream”. It was really clever and also really really delicious to mix chocolate chip cookies into the regular cookies and cream. Ice cream has been on the brain lately, and September is my favorite time of the year to eat ice cream, so I decided to top their flavor and double the cookie content! In addition to oreo and chocolate chip, I also mixed in peanut butter cookies, and finished it all off with a speculoos cookie spread as a swirl. This was hands down the best ice cream I have ever made! My only question is “who can top that shit, who can top that shit”?

Porchetta is normally eaten as a roast for a special occasion dinner, but when I was in Italy recently, we actually had it as a thin sliced sandwich meat. We got some porchetta, salami, and cheese for a train ride from Venice to Florence, and I was completely hooked on the porchetta. I happen to have a commercial meat slicer in my possession, so I thought it would be a fun theme for a party to make some different sliced meats for sandwiches. So here we are, lunchmeat week on TFimB! This porchetta tasted EXACTLY like the one I had in Italy which is pretty lucky because I just sort of winged the recipe. It was fairly easy to make and everyone loved it so I would consider it a big success!

When I get Korean food in my head it becomes like that annoying song that just won’t leave your brain until you hear it. We leave Cooking Channel on in the background at my job and they have a new Korean food show, so I am probably going to be craving these flavors a lot more often! I saw some Japche noodles on tv while I was at work the other day, and immediately made them when I got home. I wanted to use all the veggies I had on hand instead of buying a ton of stuff, so I got the noodles and headed home hoping there would be some good stuff in the fridge. I had this delicious Jones Dairy Farm sausage and some great veggies that made for a fun twist on the traditional noodle dish.

Vietnamese Bun Vermicelli Burgers

Last week I went to an awesome burger event in Boston called Battle of the Burger. It was lots of fun and sponsored by Amstel, so as you can imagine I had a few. I tried as hard as I could to taste all 20 burgers there, but alas, I only made it to about 15. I almost had to crawl out of the event I was so full! I even had to pass on the make your own sundae booth, and throw away a few bites of a shake shack burger which might have been a low point of my life. I was really impressed with many of the burgers, especially the lamb and tzatziki burger from Cafeteria, but overall, I wished some of the restaurants lightened things up a bit. Every burger was an overindulgent savory bomb which was awesome at first, but after trying 10 or so, they all started to meld together. If I was there, I would have served these Vietnamese vermicelli topped burgers as a bit of a reprieve from the bacon-truffle-mushroom-aioli-cheese madness.

What the what??? This came about because Mandi noticed the texture of sabra reminded her of cake frosting. She asked me to make her a carrot cake that we could frost with the hummus. It obviously had to be a savory cake to work with the super savory hummus. It actually came out pretty tasty! The cake was really flavorful and was almost the texture of a dense pancake. The carrot and curry really came through, and melded well with the hummus. I initially imagined this as a brunch dish, but it’s more of a cool and unique app for hummus lovers.

Fried Cheese… with club sauce. Popcorn shrimp… with club sauce. Chicken fingers… with spicy club sauce! I had no idea what club sauce was, but I imagined it to be like a cross between bbq sauce and cocktail sauce. The internet didn’t really help me in figuring out what it was, so I just made it how I wanted it to be. Honestly I thought the sauce was awesome, but the people I was with apparently don’t really like horseradish, so they didn’t enjoy the sauce as much as I did. I probably should have asked them before I dumped a bunch of horseradish into the sauce!

For people’s birthdays, I often play mad libs with their favorite ingredients to make a cake for them. It was my co-worker’s birthday last week and as the boss, I felt like I should make her a cake, but I didn’t know what she liked. I said I was doing a survey for my “other job” (this one), and asked some questions, like, “What is your favorite sweet, candy, nut, cereal, and snack?”  After weighing the options, I thought this Lucky Charms Cheesecake would be the most fun choice.
