Roger Mooking has a commercial on Cooking Channel where he whips together a tasty looking simple plantain gratin and it inspired me to make a more intricate deeper version of a plantain casserole. I wanted lots of layers of tasty things that I think go with plantains, like black beans, cojita cheese, onions, tomato, and habanero. I also mixed in a little quinoa just to add a little more substance and protein to the veggie dish. The whole thing turned out great, but make sure you use really ripe plantains. Most of mine were nice and yellow, but a few still had a little green to them and they were very noticeable and we mostly ate around them.

Up until this, I had never made granola. I wanted to start with something simple but delicious for my first try. With the fiend-like speed Mandi and I eat granola, you would think that I would make it from time to time, especially since it’s so expensive! In reality though, you aren’t really saving much money making your own granola because all the ingredients are so expensive. I loved the way this granola came out, but I found out that Mandi really loves the clusters, so I guess it wasn’t a 100% success, but I’m sure this will have no problem disappearing over the next week or so.

God this soup is so ugly. The good news is that it is healthy and tastes amazing. But yea, it looks like puke. I came home from work and decided to make an easy and healthy soup with stuff that I had lying around the house, and this was the result. It’s kinda like when you are a kid and you think if you combine all the colors in the crayon box you will make this awesome new color but it just turns out greenish black. Luckily, the flavor was the opposite of ugly.

The most common question asked of me by friends is this – “what’s
a quick, easy, healthy, and delicious dinner I can have after work tonight?” What
do you guys think I am, Rachael ray?  Well
guess what!? You’re all in luck! I am on a diet since bathing suit season
starts in a week or 2 here in Bermuda. (Even
though actual Bermudians refuse to go to the beach until May 25th.)
So I will have some healthy weeknight dinners up here in the next few
weeks.  Now don’t worry, they won’t all
be healthy.  I have a few posts I made
pre-dieting that I am waiting to post.  Also,
my diets are short because they are intense.

I’m rambling, so without further a due, my FAVORITE fast
easy delicious and super-ancient-whole-grain-run-a-mile-punch-a-baby-healthy meal!  Fish-in-a-bag!

Some of my friends right now are saying “Fish?  Really? 
I mean… I don’t really like fish.” To you I say shut up and make this
and you will LOVE it.  Unless you mess it
up somehow which you probably will.  Jeez
my friends are dumb… just kidding friends!
