Last week’s Portlandia episode was all about how celery has fallen behind a lot of other new “buzz” veggies like brussel sprouts, kale, and cauliflower, and how Steve Buscemi, the celery rep, was trying to get celery back on the map. I always love Portlandia, but when they make fun of food culture it makes me laugh even more. I decided to take this celery issue into my own hands and try and make a trendy blogger type dish with celery. My trendy blogger style dish failed, and a cocktail I made was just ok, but this celery loaded pasta was amazing. It’s not gonna go viral anytime soon or dig celery out of its hole, but it’s a great and unique dish which opened my eyes to caramelized celery.

Cheese fries are a guilty pleasure of Mandi and I but when I try to make them at home they never really stack up. The best cheese fries use that processed nacho cheese sauce that comes out of a pump at a baseball game or movie theater. I saw a recipe for this type of cheese sauce on Serious Eats recently and I put it on my to-cook list immediately. I thought it would be cool to use this sauce on a mac and cheese and top it with french fries, so that’s what I did. This is a super indulgent dish of cheese on carbs on cheese on carbs, but hey you gotta splurge once in awhile and this is worth it.

My hobby: making pasta sauces out of vegetables besides tomatoes. I’ve done it with red peppers, carrots, and now corn. Mandi is obsessed with summer corn right now, and for good reason, it just tastes so damn good! I always get happy when I can think of a fun unique corn recipe, because most of the time I just eat it off the cob and don’t get to feature it on the site. This sauce came out really sweet because of the sweet nature of corn and carrots. Overall it was really awesome and balanced with the cheese and bacon, but once in awhile you would get a bite that was a little too sweet.

This mac and cheese has been haunting me for over a year. It was on the list, but kept getting pushed back. The idea sprang from something Mandi ate at an upscale pub awhile back. Since I love the combo of mac and cheese with sriracha but never officially posted such a recipe on here, I was excited to make it. The problem was every time I tried to make it, I couldn’t find any decent mushrooms! Mushroom season is weird you guys! The other day I was in Whole Foods and they happened to have a crazy abundance of delicious and weird looking mushrooms, so I snatched them up and ran home to make this.

Bro week continues today with a super easy mac and cheese dish. The main barrier to entry when it comes to making and mastering mac and cheese is the bechamel sauce. Making a nice thick cheese sauce requires a bit of effort that most bros are not willing to put in, so the blue box reigns. THIS mac and cheese however requires no such thing! The secret is the mixing of soft and semi-soft cheeses to form a perfect gooey creamy and tangy cheese sauce without all the effort!

Mac and cheese is the ultimate comfort meal for Mandi and me. We make it when it has been a rough day, or on a Sunday night to relax. It is very easy to make, super addicting when you eat it, and the best thing is there are always leftovers to bring in to work for lunch. We wanted to make some a few days ago so I looked at the site to see what Mac and cheeses I have done on here to make sure we made something different I would be able to post. I was surprised to find only 2 (full) mac and cheese recipes! We brainstormed this one over email in the afternoon and feasted on its amazingness that night.
