As you probably have realized, I love stuffing burgers. I had this great Jones Dairy Farm Sausage and I was wondering how to make it into a stuffed burger. The first thing I thought of was going with a bangers and mash theme with the burger. I made a cheesy mashed potato that I let cool and harden, and then I stuffed it into the sausage patties. The resulting burgers came out amazing!

Some friends and I got together this past weekend to have a spicy feast and it was lots of fun! I was inspired to create the feast when the heartburn medicine Pepcid came to me and wanted to work with me on a sponsored blog post. THAT blog post is coming on Thursday, but this is the appetizer that we had that day. I got the idea for roulette style spicy apps from a super spicy dinner called Hell Night that is hosted a few times a year at a restaurant in Cambridge called East Coast Grill. What they do is give you one item per person at your table (I had it as meatballs) and most are mild, one is medium, and one is insanely hot. I instead made 75% of these stuffed mushrooms pretty hot, and 25% of them CRAZY HOT, and we all just started chowing down.

My entire cooking career, I have been on the lookout for these thinner spring roll wrappers. There is a bit of confusion with nomenclature on google, and in the grocery store, I could only ever find thick egg roll wrappers, wonton wrappers, or summer roll wrappers. Finally one day I asked an employee at an Asian market and he lead me to the freezer section! This is where I had gone wrong my whole life! The other wrappers are in the aisles or the refrigerator, but the nice thin spring roll wrappers are in the freezer. This was a whole new world to me and I instantly came up with some fun spring roll ideas, starting with this chicken tikka variety.

Seafood and sausage is always a tasty pairing. After playing around with squid cooking times and noticing that it can be tender after 3 minutes or 40 minutes, but nowhere in between, I really wanted to make a hearty tomato sauce with chopped up squid that was cooked slow and low. I decided to mix in sausage, but otherwise make it like a normal tomato sauce. I loved how this came out. The squid had a perfect texture that was super tender with just a slight rubbery bite that gave the whole dish a nice chew. The flavor combo of tomato sausage and squid with a little banana pepper thrown in is really something special and some chopped up hazelnut and meyer lemon zest on top brought everything together in a nice way.

I guess it is a little bit gratuitous to remove mussels from their shells for a recipe. I mean, they taste amazing in the shell and it is sort of a fun game to eat them, and on top of that the broth with a nice crusty piece of bread can be nectar of the gods when done right. While it was fun to try this recipe, I probably won’t be taking mussels out of their shells for a recipe again. These tacos were really great, don’t get me wrong, but it is just a lot of pointless added effort when I would be happy to just crack a beer and go to town on a pile of mussels. If you made these on a smaller scale as mini taco apps I think it would be more worth the effort.
