I had an ice cream at Ronnybrook Farm Dairy at Chelsea Market about a month ago that was “2 cookies and cream”. It was really clever and also really really delicious to mix chocolate chip cookies into the regular cookies and cream. Ice cream has been on the brain lately, and September is my favorite time of the year to eat ice cream, so I decided to top their flavor and double the cookie content! In addition to oreo and chocolate chip, I also mixed in peanut butter cookies, and finished it all off with a speculoos cookie spread as a swirl. This was hands down the best ice cream I have ever made! My only question is “who can top that shit, who can top that shit”?

I had lots of mortadella leftover from my meat slicer party, and here is just another fun way I used it up. What I enjoyed about this pasta was the creamy mustard flavor, and also the fact that the pasta and all the ingredients were similarly sized. You could just sort of shovel it all into your mouth and get all the different ingredients in each bite. Shovel-able is a great attribute for any pasta dish.

Some friends and I got together this past weekend to have a spicy feast and it was lots of fun! I was inspired to create the feast when the heartburn medicine Pepcid came to me and wanted to work with me on a sponsored blog post. THAT blog post is coming on Thursday, but this is the appetizer that we had that day. I got the idea for roulette style spicy apps from a super spicy dinner called Hell Night that is hosted a few times a year at a restaurant in Cambridge called East Coast Grill. What they do is give you one item per person at your table (I had it as meatballs) and most are mild, one is medium, and one is insanely hot. I instead made 75% of these stuffed mushrooms pretty hot, and 25% of them CRAZY HOT, and we all just started chowing down.

When I originally asked my sister what she wanted me to make for the week of easy college recipes, she replied with 2 words: pop tarts. Well I wasn’t going to actually make pop tarts, because not only has it been done to absolute death by food bloggers, but it’s also not exactly easy, and frankly isn’t even worth the effort. I instead made this cool pop tart stuffed cake that is super easy to do and a fun and unique cake to serve at a party. I forgot how much college kids love pop tarts and I was no different when I was there. I used Cherry pop tarts cause it is her favorite, but it would be fun to do this cake with different flavor combos or using my favorite pop tart flavor: S’mores.

My hobby: making pasta sauces out of vegetables besides tomatoes. I’ve done it with red peppers, carrots, and now corn. Mandi is obsessed with summer corn right now, and for good reason, it just tastes so damn good! I always get happy when I can think of a fun unique corn recipe, because most of the time I just eat it off the cob and don’t get to feature it on the site. This sauce came out really sweet because of the sweet nature of corn and carrots. Overall it was really awesome and balanced with the cheese and bacon, but once in awhile you would get a bite that was a little too sweet.

This mac and cheese has been haunting me for over a year. It was on the list, but kept getting pushed back. The idea sprang from something Mandi ate at an upscale pub awhile back. Since I love the combo of mac and cheese with sriracha but never officially posted such a recipe on here, I was excited to make it. The problem was every time I tried to make it, I couldn’t find any decent mushrooms! Mushroom season is weird you guys! The other day I was in Whole Foods and they happened to have a crazy abundance of delicious and weird looking mushrooms, so I snatched them up and ran home to make this.

If you don’t want to travel all the way to Mexico to get a cornballer on the black market, you can just make this tasty snack in any deep frying situation. I assume that the cornballs in question are similar to a hush puppy, so that was the approach I took making this recipe. They came out great and were a fun app for our little Arrested Development party. Yo soy loco por los cornballs!
