Canadian Bacon Shell Tacos

I had this idea by mistake, I meant to heat up a slice of canadian bacon in the oven and I totally forgot about it! When I remembered later, I grabbed it from the oven and it was totally solid. But not like all burnt or anything, it was a nice texture but firm. When brainstorming what to put into a Canadian Bacon taco shell, my first thought was a pickle salsa, because I love the taste of pickles with ham and cheese. I also wanted to put on plenty of lettuce to freshen it up a little. It all came together quick and easy with these slices of Jones Dairy Farm Canadian Bacon.

There is a traditional breakfast dish in mexico called chilaquiles which basically is soggy breakfast nachos. I decided to make my own version of breakfast nachos, but shred any sense of authenticity and just make them my way. They came out way better than I expected, and I would recommend this dish to anyone, especially next time you happen to be hungover. I could imagine this being served for 15 bucks at your local uptight gastropub brunch.

Green Mac and Cheese

Mac and cheese is the ultimate comfort meal for Mandi and me. We make it when it has been a rough day, or on a Sunday night to relax. It is very easy to make, super addicting when you eat it, and the best thing is there are always leftovers to bring in to work for lunch. We wanted to make some a few days ago so I looked at the site to see what Mac and cheeses I have done on here to make sure we made something different I would be able to post. I was surprised to find only 2 (full) mac and cheese recipes! We brainstormed this one over email in the afternoon and feasted on its amazingness that night.
