Watermelon Sausage Feta Grilled Pizza

Grilled pizza is probably the easiest way to make great pizza at home. I like using fresher toppings on a grilled pizza to add to the backyard summertime feel. For this one, I put a base of BBQ sauce and topped it with a little sausage and lots of chopped watermelon. Some salty feta and fresh arugula rounded out the flavors. I have never had watermelon on pizza and this one was inspired by a Hawaiian pizza I had this past weekend in Vermont. It had pineapple, bbq sauce, and black olives, so I wanted to play with that combo, but thought it would be fun to swap the common pizza fruit for a less common one.
When you buy feta in a block and crumble it yourself it tastes 10 times better. The arugula and feta seemed like a natural match for the watermelon because they are common ingredients in a watermelon salad. Grill the pizza one one side, then flip it and move it to a higher rack. Paint on the BBQ sauce first. Then add all the toppings. Close the grill and let it cook about 5 more minutes until the bottom is brown and the toppings have warmed up. Slice and serve! The flavors here are all great together and every one adds something to the whole picture. The watermelon exploded with juicy freshness on every bite. The feta and olives add a nice salty tangy bite, and the sausage has that spicy savoriness I need on a pizza. Make these pizzas next time you are looking for a unique grilled dinner!

Watermelon Sausage Feta Grilled Pizza

  • Pizza Dough
  • BBQ Sauce
  • cooked spicy italian sausage
  • diced watermelon
  • Crumbled Feta
  • sliced black olives
  • ripped baby arugula leaves

Instructions

  1. Preheat the grill
  2. Coat the pizza dough with olive oil and stretch to desired shape
  3. Grill on high for 1 minute. Rotate 90 degrees and cook 1 more minute to get cross-hatch grill markes.
  4. Flip the pizza and place it on the top rack of the grill. Brush with the BBQ sauce and then top it with all the remaining toppings. Close the lid and cook for 5 minutes until the dough is browned and the toppings are warm and softened.
  5. Cut and serve.
