Short Ribs with Chocolate Polenta

In the past I have never been big on Valentine’s Day, but this year being engaged and doing wedding planning there definitely is a feeling of romance in the air. For a romantic meal, I like keeping it simple but adding special touches. I think when you take time and develop flavors with things like slow cooked short ribs that are tender, falling off the bone, and full of deep luscious flavors, you are on the right track. A little sweet and spice go a long way, so I added some chile and chocolate to the polenta to serve alongside these short ribs.

With such a special meal, you need to add some extra touches to the table as well. Sear the short ribs first in a hot Dutch oven or heavy bottom pot. Add in stock and some spices and then pop it into the oven for about 2.5 to 3 hours. When they are tender and just about to fall off the bone they are ready to come out of the oven. Some onion, chile pepper, and beef stock are the base of the polenta. Whisk in the cornmeal. When the cornmeal is tender, whisk in chocolate, butter, and parmesan. The polenta becomes a nice deep brown color. This pre-arranged bouquet was perfect for me to just cut the stems to the right length and drop into this great debi lilly design vase that is very trendy and just our style. The short ribs are super tender and flavorful and went so well with the sweet and spicy polenta. Chocolate and cornmeal are a surprisingly great pairing and anything with chocolate will be a hit on Valentine’s Day. Short Ribs with Chocolate Polenta

  • short ribs
  • 4 large Short Ribs
  • 1 quart O Organics beef stock
  • 1 tablespoon Cumin
  • 2 tablespoons Chile Powder
  • 1 tablespoon Smoked Paprika
  • 1 tablespoon Oregano
  • 1/4 cup Red Wine Vinegar
  • polenta
  • 1 small Onion diced
  • 2 red chile peppers minced
  • 1 quart O Organics beef stock
  • 1 cup medium ground cornmeal
  • 2 ounces Dark Chocolate
  • 1/4 cup Grated Parm
  • 4 tablespoons Butter

Instructions

  1. Preheat oven to 300.
  2. Sear the short ribs on all sides in a very hot pan with some oil. Season with salt and pepper.
  3. Add in the stock and spices and stir well to combine. Place into the oven and cook for 2.5 to 3 hours until tender.
  4. Meanwhile, cook the onion and pepper in a little oil for about 5 minutes until softened.
  5. Add the stock and bring to a simmer.
  6. Whisk in the polenta and simmer on low for about a half hour, stirring occasionally.
  7. Once tender, stir in the chocolate, parm, and butter until melted and combined.
  8. To serve, plate the polenta, then top with the short ribs, drizzle on some of the short rib cooking liquid.
