Salami and Arugula Noodle Salad

I whipped up this noodle salad last night and it was really easy and delicious, so I thought I would share it with you guys. I had a ton of arugula that I had bought for another dish but never ended up using, so I wanted to use it in some sort of salad with an Asian type of noodle. Salami is one of my favorite things to pair with arugula, and I also had this really cool espresso rind cheese that was actually great in this dish.
This cheese by the way is amazing. I was skeptical when I saw it but the coffee flavor really permeates the cheese and adds the perfect amount of flavor. It is a fun addition to a cheese board, but I wanted to try it in a recipe. Grated up small. The noodles need to be boiled and then rinsed. These type of noodles can get sticky and starchy, so you need to rinse it well, and also be careful when mixing in the salami and arugula. Its easy to end up with a clump of pasta and lots of clumps of salami, but if you sort of layer it and mix things in as you go you can end up with an evenly mixed salad. This is a really simple dish with only a couple ingredients but it really comes together great! The chewy anian noodles are much different that what I normally have for pasta salad.
This was really simple, a cup of cheese (I had this one but you don't need to use it), splash of oil and vinegar, arugula, salami, and some Asian noodles. Really, just throw it all in a bowl. Check above for some tips.
