Roasted Cauliflower Soup
- 1 Onion (diced)
- 2 Cloves Garlic (minced)
- 1 Head Cauliflower (roasted to lightly brown)
- 6 Ounces Emmentaler
- 1 Quart Veggie Stock
Instructions
- Garlic and onion in the pot, followed by veggie stock, then the roasted cauliflower. Blend it up, Add more stock if needed. then add some shredded cheese and stir till its melted and mixed in well. pretty much a two sentence recipe. Make sure you salt and pepper things. My cheese was emmentaler
