Pulled Beef and Broccoli Sandwiches

I love cooking in new places! I went camping a few weeks ago and made these pulled beef sandwiches inspired by the flavors of Chinese beef and broccoli. It is also the subject of episode 2 of by new YouTube series Grilling@ which you can watch below!
First step was to make a fire. The slaw was broccoli stems, cabbage, and broccoli tops. I added a small amount of the beef cooking liquid to this, along with some lime juice. After cooking for a few hours the meat is falling apart. Put the beef on the bread to build the sandwiches. Followed by the slaw. These sandwiches are so good! Deep flavors you expect in Chinese takeout but in a handheld form! Cooking over an open fire is always a fun experience.

Pulled Beef and Broccoli Sandwiches

  • 2 heads Broccoli
  • 2 cups thinly sliced cabbage
  • 2 Limes
  • beef
  • 1/4 cup Soy Sauce
  • 1/4 cup Rice Vinegar
  • 2 cloves Garlic grated
  • 2 inches Ginger grated
  • 2 tablespoons Thai Chile Paste
  • 2 tablespoons Honey
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Chile Oil
  • 2 tablespoons Cumin
  • 3 pound sirloin roast
  • 1 Onion diced
  • Burger Buns

Instructions

  1. Make the slaw by shredding the broccoli stems with a julienne peeler or spiralizer, and cutting the tops really small. Mix the broccoli with the cabbage and set aside.
  2. Mix the soy sauce, rice vinegar, garlic, ginger, chile paste, honey, sesame oil, chile oil, and cumin in a bowl. Add one tablespoon of this mixture to the slaw and mix well. Season the slaw with salt and pepper.
  3. Sear the meat on the first side on high heat and season with salt and pepper. Flip to sear on the other side and add the onions to the pot. Cook 5 minutes to brown the meat and sweat the onions.
  4. Add the rest of the sauce to the pot and add in the beer. Stir well. Cook on low heat for about 3 hours until the meat is falling apart.
  5. Shred the meat. Finish the slaw with the lime juice. Toast the buns.
  6. Build the sandwiches, bun, beef, slaw, bun, and serve.
