Pizza Party at Table

I was lucky enough to spend some time in Kennebunkport, Maine this weekend with a group of fun friends and bloggers. The highlight of the weekend for me was when I got to cook some pizzas at Table, a kitchen and restaurant space that is normally used for special events and classes. They have a brick oven that was the perfect cooking environment for the style of pizza dough I normally make. I asked each one of my blogger friends to come up with a pizza idea and send me the recipe, and I made them one by one.
This was the crew for the weekend. A really fun group!

Pizza Party at Table
- Matt's Pizza
- 1/2 Pound Bacon
- 1/2 Onion
- 1/2 Pound Elbow Pasta
- 1 Pound Cheddar Cheese
- 1.5 Tablespoons Butter
- 1.5 Tablespoons Flour
- 1.5 Cups Milk
- 1/2 Cup Pizza Sauce
- Elissa's Pizza
- 1/2 Cup Ricotta
- 1/2 Cup Pizza Blend Cheese (Mozz, Prov, Fontina, Parm)
- 3 Leaves Kale
- 3 Eggs
- Sriracha
- Georgina's Pizza
- 1/2 Cup Pizza Sauce
- 1/2 Cup Pizza Blend Cheese (mozz, Prov, Fontina, Parm
- 5 Thin Slices Prosciutto
- 5 stalks Asparagus (shaved thin)
- Fresh Black Truffle
Instructions
Matt's Pizza
- Boil the pasta until tender.
- Make the mac and cheese - Cook the bacon until browned, add the onion and cook 3 minutes. Strain excess fat. Add the butter and flour. Cook 3 minutes, stirring often and being sure to scrape the bottom of the pan. Add in the milk and whisk. Bring to a simmer. It will thicken. Remove from heat. Add in the cooked pasta and all the cheese. Stir well until the cheese is melted and everything is combined.
- To build the pizza, form the dough and top with a very thin layer of tomato sauce. Top with a nice thick layer of the slightly cooled mac and cheese, about 1 inch thick. (it will be about 1/4 or 1/3 of the amount of mac and cheese you made)
Elissa's Pizza
- Form your dough and first put a layer of ricotta. Next goes the pizza blend cheese. Then add the kale. you want to add what seems like a ton of kale. It will shrink a lot in the oven and will also become crispy. While the pizza cooks, fry up your eggs sunny side up. Right when the pizza comes out of the oven, top with the eggs and drizzle on the sriracha.
Georgina's Pizza
- Form your dough and first top with a very thin layer of tomato sauce. Next add the prosciutto in an even layer. Add the cheese next, and then top with the asparagus. Cook the pizza and when it comes out of the oven top with freshly shaved truffles.
