Latkchos – Latke Nachos
- 3 Russet Potatoes grated (about 4 cups)
- 1/2 a large Onion grated
- 1 Egg
- 2 tablespoons Breadcrumbs
- Salt and Pepper
- Oil for Frying
- Cheese
- diced apple
- Sour Cream
- sliced scallion
Instructions
- Put the grated potatoes into a large bowl of cold water and allow to soak for an hour. Drain
- Mix the onion into the potatoes and allow them to dry on a paper towel. Wrap the towel around them and squeeze out excess liquid. Pour them into a large bowl.
- Add the egg and breadcrumbs and stir to combine. Add in salt and pepper.
- Form large coin shaped patties with the potato mixture. Pour about a half inch of oil in a frying pan. Cook the latkes in the oil about 2 minutes per side to brown. Allow to cool and dry on a rack or paper towel.
- Pile up the latkes and top with cheese and apples. Broil on low to melt and brown the cheese. Top with sour cream and scallions before serving.
