Coffee Berbere Braised Beef Tacos with Cantaloupe Salsa
- Beef
- 2 pounds beef chuck
- 1 cup Coffee
- 1/4 cup Milk
- 2 tablespoons berbere
- 2 tablespoons Honey
- 2 tablespoons Butter
- 5 cloves Garlic
- Salt and Pepper
- Salsa
- 2 cups chopped cantaloupe
- 1/2 cup sliced radish
- 1/2 cup chopped red bell pepper
- 1 Shallot minced
- 1 clove Garlic grated
- 20 Chopped Mint chopped
- Lots of Salt and Pepper
- juice of 1 lemon
- juice of 1 lime
- Other
- Corn Tortillas
- cotija or other crumbled cheese
Instructions
- Mix the beef ingredients in an oven safe pan. Cover and bake at 300 for two and a half hours until the meat is fork tender. Remove from oven, mash the garlic cloves, and shred the meat right in the pan with the sauce.
- Mix the salsa ingredients and set aside.
- Toast the tortillas in a dry frying pan for about 1 minute per side.
- Serve with the meat first, then the cheese, then top with the salsa.
