Cheesy Cauliflower And Kale Bake

I made such an easy side dish that is great for this time of the year so I thought I would share it with you guys today. I was craving a cheesy baked cauliflower dish, but I didn't have a ton of cauliflower on hand, when I realized I had some kale. I thought they would be great together in a baked dish. I didn't feel like making a cheese sauce, but I realized I had a little sour cream so I mixed it in with the cheese and it helped form a cheesy sauce for the dish with very minimal effort. I wanted a unique flavor in the dish so I ended up using fenugreek seed to give the whole dish a slight maple flavor!
Chop up the cauliflower and kale pretty small. Toss it in a bowl with the cheese, sour cream, fenugreek, some chile flake, and salt and pepper. Did you guys know that fenugreek is the main flavoring for most fake maple syrup? so using it in a dish like this adds an interesting mapley flavor. Bake it for an hour and it is cheesy and creamy on the inside, and crispy and browned on the top! Who needs breadcrumbs when kale gets so nice and crispy?! Such a great side dish for this time of the year. If you don't have these individual bowls feel free to use a bigger baking dish and just scoop it out onto peoples plates.

Cheesy Cauliflower And Kale Bake

  • 1 Head Cauliflower
  • 1 Bunch Kale
  • 6 Ounces Gouda Cheese
  • 3/4 Cup Sour Cream
  • 1 Teaspoon Ground Fenugreek
  • 1 Teaspoon Chile Flake
  • Salt and Pepper

Instructions

  1. Chop up the cauliflower pretty small. Remove the kale from the stalks and chop it up too. Add the veggies to a bowl. Add in the sour cream, cheese, fenugreek, chile flake, salt, and pepper. Stir well. Portion into individual baking dishes and bake at 400 for 1 hour. Serve.
