Brussel Sprout and Bratwurst Skewers

Almost every year around this time I try and make some sort of stuffed brussel sprout and it never works out. The idea is almost like a meatball where half of it is a brussel sprout and the other half is a ground meat mixture. I finally gave up on this idea last year, but when this year came around, I thought, what if I did this in more of a sausage shape and used a skewer to hold it all together. It worked out great! My idea was finally realized, and it actually came together when I finally let it go. I topped these with a honey gochujang mixture and served it on some rice and grilled sweet potatoes for a fantastic weeknight meal.
Put the sprouts on first and then stuff the meat in between. As I was making these, I thought it would also be awesome with a kofta mixture. Maybe next time! Press everything tight. Then just grill em up. It's good to get a nice char on these. So tasty! Halal cart meals are one of our favorites, so I was somewhat inspired by that while putting the dish together, with one white sauce and one red. I also saw some gochujang brussel sprouts on a menu recently so that's where the idea for that sauce came from.

Brussel Sprout and Bratwurst Skewers

  • Crema
  • 1/4 cup Mayo
  • 1/4 cup Sour Cream
  • 1 teaspoon dried thyme
  • 1 pinch Cardamom
  • 1 clove Garlic grated
  • 1 Lemon (juice of)
  • Honey Gochujang
  • 2 tablespoons Gochujang
  • 1/4 cup Honey
  • 1 teaspoon Soy Sauce
  • 1 tablespoon Rice Vinegar
  • Skewers
  • 30 Brussel Sprouts
  • 5 Bratwurst Sausages

Instructions

  1. Make the crema by mixing all the ingredients in a bowl. Store it in a squeeze bottle in the fridge until ready to use.
  2. Make the honey gochujang by mixing the ingredients in a bowl. Store in a squeeze bottle in the fridge until ready to use.
  3. Cut the brussel sprouts in half from the core end, removing any leaves that may fall off. Place 5 on a skewer with about an inch in between each.
  4. Remove the bratwurst from the casing and pack it tightly in between the brussel sprouts on the skewers, making sure the brussel sprouts still have a good amount of surface area to char on the grill. Repeat with the remaining skewers.
  5. Grill on high heat on all sides to char and cook through.
  6. Serve with rice and top with the sauces.
