Corn Chowder Sandwiches

In the grand tradition of TFimB turning sandwiches into dips, appetizers into soups, sandwiches into soups, dips into appetizers, etc, etc, today we have a soup turned into a sandwich! This sandwich was awesome, and tasted just like the soup.

Peace maaaaannnnnn.

Some potatoes in too with the onions, carrots, and celery.

After everything is cooked, add a bit of cream.

Blend it up.

Some jack cheese and parsley after it is blended.

Spread it on the bread.

Corn and chicken for the fillings.

This sandwich was awesome!

The sauce was a good cup and a half each of carrots, onions and celery. Cook about 1.5 lbs of chicken in some oil. I used a mix of thighs and breasts. Take out the chicken and add the veg to the same pan, scraping the bottom. Next add 2 chopped potatoes. Cook for a few more minutes then add some chicken stock to just barely cover the veg. Simmer until the veggies are very soft. Add about a half cup of cream and blend until smooth. Mix in a half cup of jack cheese and parsley.  Shred up the chicken, and serve on a roll with some corn and the sauce.

PS, this made WAY too much sauce.  I used it for pasta sauce later though and it was delicious.

  1. Wow, one of the most ridiculous sandwiches that I’ve ever seen. Sounds awesome though and I’m definitely going to try it out. Maybe i’ll use some hotdogs instead of chicken…corndog sandwich?? Who knows.
