It’s no secret that bacon pineapple jalapeno is an amazing combo. Today we have it in its purest form. A simple bite of bacon, pineapple, and jalepeno in perfect proportion with a slight cheddar accent. We have all had bacon jalapenos with a cream cheese filling, so this is a fun and delicious twist on that idea. I made these with some friends for a Christmas party this past weekend, and we all had a lot of fun assembling them and, of course, eating them!
Cut the jalapenos into 4 pieces each. This makes them more bite sized, but also helps cut the heat a bit for your guests. Take the seeds out too.
Small pieces fit nicely into the peppers.
Yum. I used about 1/3 of a bacon slice for each of these. Just one time around with a slight overlap on the top. Put the toothpick into the overlapping part.
Put them on a rack to help everything get crisp and also so that they aren’t soaking in the bacon fat while they cook.
Crispy, chewey, spicy, sweet. Surprisingly light when you use a pineapple instead of cream cheese!
