Red Lentil Dhal

Lentils and brown rice are acceptable in moderation on the diet I have been talking about the past few days. The first thing that came to my mind was dhal!  Dhal is the rice and beans of india!  There are a million ways to make it, and this was my first attempt so it was a pretty basic one.  This is one of the less healthy meals I have had over the past few days, but it was far from bad for me, and was extremely satisfying when you have been eating mostly vegetables. I mixed some cauliflower in with the brown rice to add texture, and up the veggie intake.

Mustard seed and fenugreek. A few dried chiles, and a bit of garam masala. This went into the spice grinder.

Cook the onions in oil first for a few minutes. Then add ginger and garlic.

Next add tomatoes and your spice mix.

Cook this down till it sort of forms a paste.

Add those yummy blurry red lentils. Add a few cups of water, some turmeric, and honey (don’t tell). Simmer it for about 20 minutes and finish it with yogurt.

Chop up the cauliflower so it’s only slightly bigger than the rice. Rinse the rice like usual and cook it. Add the cauliflower to the rice when there is about 5 minutes left of cooking time.

I am not the biggest brown rice fan, but this was pretty tasty with the cauliflower mixed in.

YUM! Dhal is sooo underrated.

Spice:
1 teaspoon fenugreek
1 teaspoon mustard seed
1 teaspoon garam masala
3 dried chiles.

1 large onion diced
2 large tomatoes diced
3 cloves garlic minced
Thumb of ginger minced.
1 cup lentils
4/5 cups water
Half cup yogurt
Teaspoon honey
Teaspoon Turmeric

Toast spices, then grind.
Cook onions in oil 10 minutes. Add garlic and ginger 1 minute. Add tomatoes and spices 10 minutes till it forms a paste. Add lentils, water turmeric, and honey. Cook 20 minutes. Finish with yogurt. Serve over rice. That’s pretty easy huh?? This makes a ton. I was bringing it to work and eating it all week! Real cheap too!
