Bro Week: Baked Chicken with Tomatoes and Spinach

It's bro week! When I say "bro week" I don't mean bro food like chicken wings and pizza, what I mean is recipes that bros can make. Probably 4 or 5 times in the past month, good friends of mine have asked me for recipes and when I try and direct them to my website I realize that many of my recipes are too hard to make! The food I post on TFimB is stuff that I love to make and eat, but not stuff that your average inexperienced cook can make. I decided to dedicate a week of recipes to my friends who don't know what they are doing in the kitchen. Super easy meals that they could make, enjoy, and maybe even impress some people with.

Bro week starts off today with a simple weeknight dinner. It was inspired by my roommate Joe. He came home after work one night and slapped 2 chicken breasts in a baking dish with no seasoning of any kind. He popped it in the oven, and 20 minutes later he ate the dried out bland chicken with a generous helping of BBQ sauce. As far as I could see, this whole ordeal took about 3 minutes of active prep, 20 minutes of baking time, and 2 ingredients. I set out to try and make a weeknight meal that had a similar time commitment with only a few more ingredients and a way better payoff.
I really wanted this to only have 5 ingredients, but everything here just made sense. Each ingredient does it's job and helps out in it's own way. Joe's chicken took about 3 minutes of prep time, this one took no more than 6. Just pop all the ingredients into a pan and send it into the oven! After it bakes the top is nicely browned. Serve it with rice and it's a fairly nutritious, extremely fast and easy weeknight dinner. And it's tasty!

Bro Week: Baked Chicken with Tomatoes and Spinach

  • 2 28oz cans Canned Diced Tomato
  • 1 5oz package Baby Spinach
  • 1 Tablespoon Paprika
  • 5 Chicken Breasts
  • Salt and Pepper
  • Parm
  • Breadcrumbs


  1. In a very large baking dish, mix 2 28oz cans of diced tomatoes with one package of fresh baby spinach and about a tablespoon of paprika.
  2. Top with 5 chicken breasts, season with salt and pepper, and top the chicken with some breadcrumbs and Parmesan cheese.
  3. Bake at 400 for about a half hour to 45 minutes and if the top isn't browned, broil it for a minute or 2. Check to make sure the chicken is fully cooked. Serve with rice. Serves 5 people, or less if you want leftovers for work the next day..
