Caesar Salad.  We have all had it countless times, but have you ever made Caesar dressing?  I finally did the other day and I was VERY happy with the results.



I had some old bread that I used for croutons.






A few chicken breasts seasoned with salt and pepper.  The grill was fiery hot.



Now for the dressing.  The dressing is a Wolfgang Puck Recipe I found on the food network website.  I am going to use this as an opportunity to mention that if you get the fine living channel, they play Wolfgang on there all the time and he is hilarious to watch, and makes great things on the show.  I definitely suggest checking it out.  This is an egg yolk in the blender.  Raw egg?!?!?  Yea   its fine, don’t worry.  You are eating like 1/8th of this yolk so it isn’t really gonna cause you any harm.  Just make sure you use really fresh eggs. 


Lots of lemon juice.






Anchovies?  Are you one of those people who goes to a restaurant and asks if there are anchovies in the Caesar salad?  Guess what?  There ARE.  And that’s why it tastes so good.  So stop freaking out, tell raph here and the rest of the turtles that its cool to have an anchovy once in awhile.  Please don’t dropkick them out of the recipe.  Using them is just like adding a different kind of salty flavor to the dressing.  It’s like using fish sauce in Thai food.  It isn’t really noticeable in the final outcome but it adds a unique flavor you can’t get from anywhere else.





I rinsed these little fishys off and put them in the blender



Some Dijon and red pepper flakes.






Why did it turn white?  Well kids, all we are really doing here is making mayonnaise.  A flavored one.  An emulsion between egg yolks and oil is mayo.

Perhaps the best ceasar salad Ive ever had.  Here is the recipe again.  I also added some shredded parm to the blender and shaved pieces on top as you can see.
