I had a handful of different cravings at the grocery store on my way to my friends place. I wasn't sure exactly what I wanted but I knew we were grilling. I started to go into the direction of an italian pesto-like pasta salad with some grilled sausage, but then I got the usual cravings for Vietnamese rice noodles I have all the time. I ended up sort of combining the dishes into something fun and delicious.
First mix a diced cucumber with a bunch of herbs
Cook the pasta and dress with the sauce, then mix in the cucumber and herbs.
Grill up some sausage and shrimp.
Serve the pasta salad with the grilled meats on top.
A fun and different way to serve your grilled goodness!
1 pound ditalini pasta
1 English cucumber
1/2 cup mint
1/2 cup basil
1/4 cup fish sauce
1/4 cup sesame oil
1/2 cup rice vinegar
1 tablespoon sriracha
shrimp and sausage
Dice the cucumber and chop the herbs. mix together. Cook the pasta. Dress the pasta with the liquids. Stir in the cucumber/herb mix when it is slightly cooled. Grill off the shrimp and sausage and serve atop the salad.
