This was one of those times where you open your fridge and try and put together a meal with lots of ingredients leftover from other recipes. I had tons of different herbs, half a cabbage, some sharp cheese, olives, and pizza dough. Normally when I make a clean-out-the-fridge meal, I don't take pictures, but this 'zone came out fantastic, and much different than any calzone I have ever had, so I decided you guys might be interested. It was almost more of an intensely flavored empanada filling in a pizza crust.
Step one is to caramelize some cabbage.
Then chop up all of your herbs, chiles, and olives.

Mix the herbs into the cabbage and add some cheese.
Roll your pizza dough out thin.
Bake at 500 for about 7-10 minutes.
So tasty and flavorful! Sharp from the olives and cheese, and fresh tasting from all the herbs.
I ate these for dinner but they would make a great app or finger food for a party.
Chopped mint, basil, parsley, and scallion equal to about 1 cup total. half a cabbage, chopped and caramelized until very browned. 3 red chiles and 10 olives, finely chopped. About a half cup of a sharp hard cheese. I used Sartori BellaVitano, because I recently had some sent to me, and I really think it made these calzones amazing, but for a substitute, you could try pecorino romano, or grana padano. Mix it all together and pop it into some thinly rolled pizza dough. Bake at 500 until browned.
