Deep Sea Diver Scallop Ceviche

Last week I went to see Cayucas with some friends, and before we headed out to the show, I made this tasty ceviche as a light pre-concert meal. It was inspired by their song "Deep Sea Diver", and it was summery, fresh, and reminiscent of the ocean, just like the band's music!
I got some super fresh scallops from the fish market since I wouldn't be cooking them. Quartered and tossed in lime. Cucumber and mint make this super fresh tasting. I think im falling in LOOOO-Oo-Oo-OovEEEE. It's like eating sunshine!
Check out the song Deep Sea Diver
