Last week I went to see Cayucas with some friends, and before we headed out to the show, I made this tasty ceviche as a light pre-concert meal. It was inspired by their song "Deep Sea Diver", and it was summery, fresh, and reminiscent of the ocean, just like the band's music!
I got some super fresh scallops from the fish market since I wouldn't be cooking them.
Quartered and tossed in lime.
Cucumber and mint make this super fresh tasting.

1 pound fresh scallops, cleaned, beard removed, and chopped into quarters
1/2 a cucumber, diced
2 teaspoons chopped mint
1 clove garlic, grated
1/2 a red onion, diced
4-6 limes, juiced
Mix all the above ingredients with about 1/2 teaspoon of salt. Allow to marinate in the fridge for about 45 minutes.
The slaw was:
1 cup grated carrot
2 cups shaved red cabbage
1/2 a red onion thinly sliced
1 tablespoon agave nectar
1 teaspoon sriracha
1 tablespoon fish sauce
juice of 1 lime
1 teaspoon chile flake
1/2 teaspoon salt
Mix all the ingredients and allow to sit for a half hour at least before serving
