After the pizza roundup I did last week, I was craving pizzas. Much more than I was craving mac and cheese, soup or burgers. This pizza with chimichurri as the sauce has been on my to-do list for probably about a year, and believe me it was worth the wait. Herby, garlicy, and loaded with olive oil, the chimichurri was a perfect fit on this pizza.

Throw a bunch of herbs into a food processor with garlic and oilive oil and pulse to make the sauce. I used mostly parsley, with basil and oregano. Marinade a skirt steak with garlic, some vinegar, worcestershire sauce, soy sauce, and a little honey. Sear the steak about 5-6 minutes a side to a medium doneness. Cut against the grain into thin strips. Make the pizza with chimichuri instead of sauce and top with cheese. Cook at high heat and add the steak when it comes out of the oven.
