It's a little late to use as a "game-day snack" as the post suggests, but these Polenta Salami Roll-ups are good for any-day snacking.

This is a great idea! I love clever little recipes like this.
So I saw you had posted this on Taste for adventure, and I knew right away that I needed to make this, and make it I did...but it was a disaster....I couldn't dry it up without it falling apart. I let the polenta set up for about 4 hours, so maybe an overnight rest would have changed something, but I'm not sure, the other thing I considered is maybe I kept on flipping it too early, making it fall apart...any thoughts?
Nossi - It's a really fragile recipe (as mentioned) and little differences in cooking could really mess things up. If there was a little too much liquid or slightly not enough cornmeal it could become too loose of a polenta and not fully form the spirals. Also if it is cooked slightly too much or not enough. I'm really sorry this one didn't work out for you!
