Just Some Lobsters in a Pot...

It wasn't all hard work at the restaurant for me the past 3 weeks. I was luckily able to sneak down to Rhode Island for a day to visit my parents who were renting a house at the beach. It was a perfectly calm and casual day, just the contrast I needed to the extreme hectic conditions at the burrito shop. My mom asked what I wanted to cook that night, and it was a natural reflex for me to yell back "NOTHING!" Instead of cooking, we walked to the docks and got some fresh lobsters. Went to the farm and got some corn and potatoes. Tossed it all into a pot of boiling water, cracked a few beers, drained the pot, and attacked! It was easily one of the best meals I have had all year.


My uncle first made some clams on the grill.



Grill until it opens, drain, salt, pepper, serve.

Everything boiling away. Potatoes went in first, followed by the corn and lobster. The potatoes cooked about 25 minutes, everything else about 15.

When you have ingredients this good, you don't need to do much to them.

Boiling corn for 15min made me cringe a little, but I'm guessing with the lobster being added to the pot it probably cooled things down a little. Altitude might change things a little too. We're about 900ft above sea level and cooking the corn in a rolling boil for about 9 minutes is perfect.

Also if you don't feel like boiling a pot of water, and aren't cooking for too many people, wrap an ear in a wet paper towel and microwave for 90 seconds. Great afternoon snack.

Boy, what I would have given to be apart of this! It all looks so simple yet great! Glad you were able to enjoy down time. That's always important, especially with family!
