IPA Gravy

IPAs are generally my first beer choice throughout most of the year. Sometimes in the winter I will go with a stout or porter, and sometimes in the summer I will choose something lighter, but India Pale Ale is my usual go-to. If you have an aversion to the bitterness commonly found in hoppy IPAs, you probably aren't going to love this sauce, but if you are like my sister and I and seek out the highest IBUs (international bitterness units) you can find, then this is the sauce for you!

For this sauce, I used the IPA from my new favorite local brewing company Clown Shoes. They have a beer called Supa Hero IPA that only uses the freshest hops they can find and because of that the recipe for it actually changes all the time.

Followed by the beer! Don't add it all at once or it will overflow. Some vinegar and sugar in here as well. Reduce the beer by half, blend, and thicken.  I also added the pan juices from cooking the steak.



I loved this sauce, but as I mentioned, not everyone will love the concentrated bitter IPA flavor. My roommate took a little too much sauce in his first bite thinking it was normal gravy (even though I warned him) and he pretty much spit it out!



Supa hero indeed.


The beer comes in large bottles that I think are 24 or 32 oz? Buy 2 of them, one for drinking, and one for using in the sauce. In some butter, saute half of a medium/smallish onion and 2 chopped tomatoes with all the gooey stuff removed. After 5 minutes add 2 cloves of garlic, then toss in one of the bottles of beer. Add a splash of vinegar, pinch of sugar, and don't forget the salt. Let this simmer till it reduces to almost half. Blend smooth with a stick or normal blender.  If you are making steak with this recipe, add the pan juices from cooking the steak to the sauce.  Meanwhile whisk equal parts cornstarch with cold water and slowly add it to the smooth beer mixture until it is thickened to your liking. Serve with some steak and mashed potatoes.
