Horseradish Mash Fail

This was one of those things that I thought seemed so obvious. We all like horseradish mixed in our mash potatoes, why not cut out the middleman and just mash up fresh horseradish? The root reminded me a lot of celery root, and that tastes great mashed. Why hasn't anyone done it? Well, because it doesn't work. One quick trip to wikipedia could have prevented this tragedy. the root darkens, loses its pungency, and becomes unpleasantly bitter when exposed to air and heat. Unpleasant doesn't even describe how grossly bitter this mash was. Let's take a look shall we?


Crazy horseradish. I often see people pick these up in the grocery store and make lewd gestures with them.  I tried to choose the least phallic ones that they had because I myself am MUCH more mature than that. Right?



Peeled, these things smell awesome.



I recommend cutting them in half the long way, because there are pockets of grossness in the middle sometimes.



Oh yea, also, ramps are delicious. I just sprayed them with some oil, salted, and tossed them on the grill.



Yum. The smells inside and outside were great, this meal was going to be a winner!



Nevermind! Gahh it was sooooo bad. All the butter and chives in the world couldn't even touch the depths of bitterness.


Do not try this at home.

Mix that horseradish with a touch of vinagar and it should prevent it from becoming brown or bitter when heated. Try them mashed taters again and undo that fail. Horseradish mash is my fave!!
