Squash-Potato Mash

I sort of feel like it's slightly too early to do full-on fall flavors, but when the chill is in the air, and your friends are asking, you have to give in to certain demands. I mashed this squash with potatoes to give it the starchy mash potato texture with a subtle squashy taste. I mixed in a whole bunch of stuff we had around, and it was a big hit! It was served with some marinaded steak tips.


Squash and potato in the pot. I think the ratio was about 2/3 potato to squash. I added cream about halfway up the potatoes, and some salt and pepper, and let it boil/steam until everything was tender, stirring a few times. No need to drain it, just mash it up! I wanted to do it this way to keep as much potato starch as possible and retain the creamy texture.



It may be getting colder, but it's still nice days all around! Grilling some poblano peppers and onions.



The peppers were skinned, and everything was diced to go into the mash.



All good stuff.



A nice meal for a Sunday night with friends.

I get mad when you make something that looks really good and you didn't make it when you lived with me. Maybe mad isn't the right word, just a little jelous that I don't get to have any. :)

Oh man this looks good! I didn't even KNOW you could make mashed potatoes like this, without boiling in water first! What kind of squash did you use? Looks like butternut, but I could be wrong...

Hey, I have a question, did you boil/steam the veg in cream? as in, boil it in cream instead of water????? rather than boiling the veg then adding the cream to the mash....

I know what you mean Missy. Jo and I say the same thing.
