Celery Root and Broccoli Rabe Dip

So I had a party this past weekend, and it was a lot of fun! It feels awesome to finally have an apartment again and be hosting parties. I made a few apps for the party, and that is going to be what I post about this week. Here we have a dip that I describe as "fall's answer to spinach artichoke dip". For the hearty artichoke part, I instead used celery root, or celeriac. For the leafy green part I used Broccoli rabe. The dip was great and got eaten up faster than I expected!


Celery root. This was peeled and boiled until tender, then put into the food processor.



I then boiled the broccoli rabe in the same pot for about 2 minutes.



Shock the broc in ice water to keep the color.



I food processed the broccoli with a block of cream cheese. I also added a little bit of sour cream to this



Pepper jack on top to add a little kick.



Creamy, cheesy, tasty. Reminicent of spinach artichoke dip, but with unique flavors.




2 celery roots, 1 bunch of broccoli rabe - stems removed, 1 stick cream cheese, huge spoonful of sour cream, pepperjack cheese. peel and cut the celery root, boil until tender. Food process. Blanch the broccoli rabe. Shock in ice water. Food process with cream cheese and sour cream. Top with pepperjack. Bake until the top is brown.
