Blueberry Coffee Cake

My roomate went blueberry picking last week, and afterwards made a blueberry coffee cake with her harvest. I followed her around with a camera while she made the cake, because I don't do enough baking on this website. It was pretty awesome and we ate it for breakfast all week! Also to note - Macheesmo made a coffee cake with actual coffee IN it this past weekend, so thats worth checking out.


So here she is blueberry picking. Also... NECK BASKET!!! have you guys seen that fake infomercial? NECK BASKET!

Here is Missy pouring some white stuff into a bowl. I don't know what they are because she didn't give me the recipe yet, but it looks like flour, baking soda, and salt.





Tons of fresh blueberry's. We put in like double the amount it called for.






Slap Chop! Missy why are you the infomercial queen right now? I also noticed a sonic blade in our kitchen... I think these are walnuts.



Crumb is the best.





Very nice. Moist and crumby. We probably should have doubled the crumb though. Next time!







I had this with a blueberry smoothie with lots of blueberry's and some yogurt and thats it. A bowl of boo-berry cereal would have put this breakfast over the edge, but more on that later!


Sooooooo, Missy, you never gave me the recipe. Post below pleeeasseeeeee.

Man, I used to make a mean blueberry coffee cake. Haven't made it for a long time. Looks awesome, keep up the good work.

Sorry! Here it is

2 c. flour
2 teas. baking powder
1/2 teas. salt
1/4 c. butter or margarine
3/4 c. of sugar
1 egg
1/2 c. milk
blueberries (i think one package)

topping
1/2 c. brown sugar packed
3 Tablespoons flour
2 teas. cinnamon
3 T. butter or margarine
1/2 cup finely (slap) chopped pecans or walnuts

Grease and flour inside surface of 9 in. spring foam pan. On wax paper mix together flour, baking powder and salt. In large mixing bowl cream butter and sugar, beat in egg. Add flour mixture and milk. Stir just until dry ingredients are moistened. Fold in blueberries. Turn in prepared pan. Sprinkle with topping. Bake at 375 for 45 to 50 mins. If topping begins to burn before cakes done cover with foil.

Topping
In medium size bowl mix together brown sugar, flour and cinnamon. With pastry blender cut in butter until particles are fine, then mix in nuts.

Does the recipe provided double the crumb topping or do I need to adjust myself? Don't want to assume and be wrong. Oh and the bowl with the flour, salt, etc? I have that exact same one!!!
