Semifreddo Ice Cream Cake

I don't really have a story for this dessert like I usually do, I have been traveling and sleeping on couches for almost 3 weeks now and I am exhausted. I have been cooking, going to job fairs and trying to find work, but mostly having a good time. I am heading back home soon, but not before hitting up a Red Sox game tonight, and possibly the Boston Marathon on Monday. Speaking of Monday, it is a holiday in Massachusetts, and a holiday on this blog, so I will probably not be posting. So what about this cake? It was crazy good. It combines 2 things I have been wanting to make for awhile, an icecream cake, and semifreddo.


Oreo cookies make the crust for the semifreddo.



Mixing peanut butter with red wine may seem weird to you, but when you do it and smell what is happening, you will be taken back to when you were young. Smells like PB & J! in the final dish you won't smell or taste the wine, it's presence helps the semifreddo stay smooth and not become a frozen brick.



I like this picture. Look at the size differences in these egg yolks! They were all listed as "large".  It is supposed to be 8, but I threw in an extra cause some were so small.



The wine, peanut butter, yolks, and a splash of cream come together on a double boiler to make a silky smooth zabaione.



When the zabaione has cooled, mix in some whipped cream.



Then slowly fold in the rest of the whipped cream.



I poured this light mixture into a square pan, topped with the oreo crumbs, and put it into the freezer.



The next day I baked my favorite cake recipe. Here is the cake cut in half. As you can see, the semifreddo is freddo. Place it in between the cake layers. I stuck this back in the freezer for about 20 minutes so it would be easy to cut.



This was soo good. Like a big ice cream sandwich!



I topped it with a simple ganache. Cream and chocolate.





Semifreddo is like this weird version of icecream, but it is super light, and at the same time custardy from all the yolks.


This is the favorite cake recipe I was talking about.

I couldn't find a peanut butter semifreddo recipe, so I had to make one up! Actually there was one that used peanut butter chips, but I wanted the real stuff.

8 yolks
2 tablespoon red wine
1/2 cup organic unsweetened peanut butter
1/2 cup sugar
Splash milk or cream
Mix above ingredients and a pinch of salt. Place over double boiler and whisk constantly. In 3-5 minutes after achieving a temp of 160, move to ice bath. bring to room temp.

1 cup whipping cream
2 tablespoons sugar
1 tablespoon vanilla
Whip above ingredients until you have whipped cream. Mix 1/3 of this into the cooled yolk mixture. When mixed, slowly and gently fold the rest in. Freeze for 12 hours. You guys can figure out the assembly stuff according to what size pans you have.

I bet that chocolate cake would taste even better with some booze soaked in it!! or maybe i just need a drink?
