I know you guys were on the edge of your seats all day yesterday wondering if I stuffed the burgers of not. Well I did! I was gonna put the corn and carrots in the potatoes and leave the burgers plain, but then I really thought about shepherds pie and I realized the corn and carrots are usually mixed in with the beef. I'm glad I stuffed, cause these burgers were fantastic! A great St Patrick's day lunch! I never thought to top a burger with mash potatoes, and I have clearly been missing something my whole life. The superfans may remember my old friend Gareth from Bermuda who loves shepherds pie. He would DIE if he ate these burgers. Cause of death: palate explosion.
A quick saute on some carrots, onions, and corn.
The carrots, onions, and corn mixed in with beef, salt, pepper, and worcestershire sauce.
So good. The mashed potatoes were just boiled potatoes with some cream, garlic, salt, and pepper.
My mom just got home and was skeptical about the potatoes on the burgers. This is what it looks like to be living the unemployed life.

Chop a half cup corn kernels into small peices. Dice about 2 large carrots and half an onion. Saute this stuff for about 5 minutes in 2 tablespoons of butter. After it cools, add it to a pound of ground beef. Add a bit of salt and pepper and a few splashes of worcestershire sauce. Mix this until well combined, but dont overmix. Form 4 patties. In the meantime cook a few potatoes in some water. When tender, mash with a diced clove of garlic, salt, pepper, and a few splashes of cream. Grill the burgers on one side, flip and add the potatoes and a slice of cheddar. Let the cheese melt and cook the burgers until medium. Serve on a grilled bun!
