Potato Salad

This past weekend was Kim and Riches (Design Team) birthdays. To celebrate, we all went to the south shore in MA and had a great beach day. Afterwords, everyone headed to a friends house for a BBQ. Kim specifically requested for me to bring my mothers potato salad, and I realized I had never posted it here! In fact, I have never posted a potato salad of any kind. This is because I kinda don't like potato salads. I think that they are mostly big chunks of bland potatoes smothered in mayo. This one that my mom makes is pretty great though, the potatoes are all mashed up so the flavor runs throughout the dish.


This is my new friend Maya. She is staying with my family for a while and may show up in some future posts. On this day, she helped me out peeling potatoes.



Lots of potatoes to peel.



After the potatoes were peeled and cut into chunks, we tossed them into salted water to come to a boil. O n top of the potatoes, throw in some eggs. This way you get 2 jobs done with just one pot of water. When the pot comes to a boil, take the eggs out about 15 minutes later. Put them right into ice water and peel them.



When the potatoes are all out and in a bowl, start seasoning them while still hot. First add some pickle juice and start stirring.





After tasting, it was still a little bland and dry. I added some more pickle juice, mayo, mustard, and the chopped hard boiled eggs.



It was finally the perfect flavor and consistancy.



Later at the party, Kim was grillin up food for everyone. Kim, people are supposed to make food for you on your birthday!!!

It is hard for me to give measurements on this one guys! For one, I made a huge batch with like 15 potatoes. Secondly, as we were going, I tried to mentally figure out some of the measurements as we were dumping ingredients into the bowl, but as we adjusted seasonings with a little bit of this, little bit of that, I lost track. This is a loose attempt!

1 bag (5 lb?) yukon gold potatoes.
6 hard boiled eggs chopped
half bell pepper diced
3 ribs celery diced
1 onion diced
1 cup mayo
1/2 cup mustard
1/2 cup pickle juice
Salt
Pepper

Peel chop cook potatoes
While still hot (important), add stuff and mix well. potatoes will mostly mash as you mix. Taste taste taste and adjust seasonings as needed!

I'm glad you enjoyed this. The original recipe actually came from Kim and Missy's mom!!! I always hated potato salad because of the big chucks of potato. This salad changed my mind. As far as measurements go its hard to say. We used a 5 lb bag of potatoes. The salad should be on the soft side because the dressings tend to be absorbed as the salad sits. Happy Birthday Kim and Rich!!

your blog is the best

I made this for a picnic I went to, it came out perfect! I always looked forward to this potato salad at 4th of July time!

Just made some and it's chillin' in the fridge.
But we used less potatoes and more onions, peppers and celery. Also added a few gherkins and black olives to taste.
Can't wait.... you always so good!
