BBQ Chicken Grilled Pizza

Hey guys! Sorry abut the lack of post yesterday, I know you all need something to get you going on Monday mornings. But don't expect a post next Monday either, it is a holiday here in Bermuda and I will be on a secret beach somewhere with some friends and my sister who is coming down to visit!


I have always been sort of anti grilled pizza until a few weeks ago. You can read all about it here. Since then I have wanted to make it again, this time with the flavors of bbq chicken. It seems obvious to make a pizza on the grill with flavors that I normally cook on the grill anyway! First let's make the BBQ sauce. These are some dried chiles in the pan with a little hot oil. After 2 minutes, take them out but leave most of the oil.



Some butter, onions, and jalapeno.



Tomato paste. Better directions are down below. Not MUCH better, but better.



Can of tomatoes went in along with the reserved dry chiles. Then the bowl of "other stuff" which included molasses, brown sugar, mustard, balsamic, Worcestershire, cumin, paprika and honey.



After that cooks for 20 minutes, into the blender it goes.



Now that the pan is free, I put in the chicken thighs.



After they browned on both sides, the bbq sauce went in and they braised for 20 minutes.



Now on to the pizza. I went over the grilled pizza method a bit better in the last post, but the idea is to put it on a hot side of the grill for 1 minute, flip it to the cool side and quickly add toppings. Then cover and let it sit for 10 to 15 minutes.



This may seem like it is still on the hot side of the grill, but I am actually standing on the other side taking the picture so you know... sleight of hand and stuff.



The bbq sauce was the sauce for the pizza. We added chicken, corn, red onions and cheddar and monterey jack cheeses. After it came off the grill we added cilantro and avocado.









I suppose I have come around to the idea of grilled pizza. This was really tasty. The main advantages to grilled pizza are that your kitchen doesn't get really hot and there isn't as much mess. Also if you are using store bought dough, the flavor and texture comes out pretty good on a grill. As always, I can't mention pizza without mentioning pizza week and my pizza oven, but that's another post right?


BBQ sauce - I made bbq sauce once before on this recipe. This is sort of a modified version of that using what I had laying around.

2 tablespoons balsamic

Tablespoon:
Mustard
Molasses
Cumin
Paprika
Brown Sugar

Teaspoon:
Honey
Worcestershire

Mix all above things in a bowl.
Dice an onion and jalapeno
De-seed a handful of dry chiles. Cook chiles in small amount of oil - 2 minutes
Remove and reserve
Add butter, onions, and jalapeno to pan. Salt pepper. Cook 7 minutes on highish
Add 1 small can tomato paste. Cook 4 minutes
Add one 15 oz can of tomatoes, reserved chiles, and bowl mix. Cook 20 minutes. Mix in a blender.
