We hadn’t made pasta in some time, and for some reason I was craving manicotti. As a kid, this was my favorite meal and I hadn’t had it in years! we decided to have a nice night in and watch the opening ceremonies and spend time making this meal great. We started with some drinks and apps as you can see here. Some would call this cannelloni, where manicotti would be pre formed tubes, but this is what I grew up knowing as manicotti.
Sometimes Bermuda cable likes to blackout other channels so that you have to watch major events on their channel. Unfortunately, this channel often comes in terrible and is choppy. This pic is us watching this logo for 10 minutes while they got their stuff together.
People always ask me how to make tomato sauce. It is easier than you think! Start with onions, garlic, salt, pepper, olive oil, and red pepper flakes in a hot pan. Add ground beef and brown. Or BROOOWN as Ann Burrell would say.
Take some whole plum tomatoes from a can. The best quality you can find. Try to find san marzano if you can. I put them in a blender with basil, but you can just crush them with your fingers if you want it more rustic. I used 4 large sized cans, it was 3 blender loads.
After adding the tomatoes, add a bunch of parm and throw the rind in there too. Add some dry oregano as well and a pinch of sugar. You’re done! Just let it cook for 2 hours now.
We make a bit extra pasta and use the first pieces to clean out the machine.

It is easiest to cook one strip at a time.
We pinched the ends slightly so the filling would stay in.

they freeze well too. Freeze them on a pan so they don’t stick together.
Just lay them out on a pan, cover with sauce and cheese, and bake.
