Hey dude

Here's the recipe for Me 'n' Kim's Chili Vanilli
I uploaded a folder of the pictures i took tonight too.

1 Big Tablespoon of BBQ Sauce
Sea Salt
Black Pepper
2 Teaspoons Ground Cumin
2 Big Tablespoons Chili Powder
1 Tablespoon Extra Chili (Wicked Pissa Spice) Powder
1 Teaspoon Red Pepper Flakes
1 Teaspoon Paprika
Dash Sugar

Cheddar Cheese
Diced Scallions

Cut and prep all ingredients
Season the Beef and Sirloin Steaks with Salt, Pepper, Garlic Powder, Paprika, Mesquite Seasoning

Brown Beef - separate into another bowl
Brown Sirloin - separate into another bowl

Cook Onions, Peppers, Celery, Garlic

Add the s*** from the insides of the 2 Vanilla Bean Pods,
sea salt, pepper, cumin, chili powder, spices, red pepper flakes, paprika, dash sugar (all of it should come out to about 1/4 cup)
Add beer, tomatoes, bbq sauce, beef broth, 1 beef bouillion cube
Add beans, bacon and meat back in.

Simmer for at least an hour, stirring every 10 minutes.

Serve hot with chopped scallions and cheddar cheese in a bowl.

It's really sweet, but only after you chew and swallow it, you feel the heat...

Chili Vanilli - there's nothing else to say...

I was completely surprised by this email because on that same day, 600 miles across the ocean, here I was making the exact opposite thing.  While they were making chili with the main flavoring ingredient used in ice cream, I was making ice cream with the main flavoring ingredient used in chili.

He diced some sirloin and also had ground beef

The delicious vegetable known as bacon

On the left, some red onion poultry, the right, red onion and pepper fish (good job with the cutting boards guys)

mmmmmmmm beeeeeef

Hey can I grab some of that Vanilla for my ice cream?   Ill give you a chile

Those beans look like a lougie, I usually rinse mine first

Looks pretty good guys, can i come over?  ill give you bite for bite

Wait, is this still the chili pics?  Nope!  In this picture i was planning on drawing a skull and crossbones and writing "triple triple death" in scary lettering.  The point of triple triple death was 3 kinds of chocolate, 3 kinds of chiles.  However, the ice cream did not really come out death inducing weather it be death by chocolate or by fire.  It was still delicious, but next time I will kick up the chocolate level and also add a few more Thai chiles.  There was too much chile powder (even though I used less of what is shown) and not enough actual chiles.  This caused the flavor of the chili powder in the front of the bite, yet not enough of the kick in the back.  The goal had been all chocolate up front, all kick in the back.

I decided to take advantage of daylight since we don't usually cook when it is still light out.

I kept putting some chocolate onto the chiles to taste the different flavor combinations

"Scald" some milk on the stove. Basically heat it up but DONT let it boil.  this is where we also added the chocolate.

Egg yokes and sugar in the mixer

Slowly add the scalded milk

Add the chiles and bring to about 170 degrees F.  Then fridge it and let it chill for more then 3 hours but less than a few days.

3 hours later we began whipping the same amount of cream as we had milk earlier.  2 cups

You barely want soft peaks here.  This is just to give the cream a head start in the churning process.

Strain out the chile chunks and gently fold the mixture together.  The ice cream machine will do most of the work

Mandi named the mixer "Bonnie" and the ice cream maker "frank"  whenever they get together they make sweet sweet ice cream.  I almost want to look away.  Maybe ill set it up in the bedroom next time

About 20 min later this is what it looks like.

It was pretty good but as I said before, next time more chocolate and chiles, less powder.
